Kind of Dim

-I hope you have no expectations for this blog entry. I am writing it for no other reason than I haven't updated in almost 2 months. I gotta find something to exercise my mind (blog more?) because this whole not working thing is making me kind of dim and lacking in inspiration. So, bullet-point blog it is because that's the best I got for ya.

-I went online to register for my second half the other day in order to stay legit. I was scared as all get-out to do it because that means training and running the race in temps about 40 degrees outside my comfort zone. Though I really wanted to do it, I can't lie...I was a little relieved to see the "race full" page. Hey, it wasn't MY fault, right?

-We just made a decision about Liam's kindergarten. We never had any alternatives other than public school in mind. Traditional private school is way out of the question. The thought of me taking sole responsibility of my children's education through homeschooling gives me the shakes, and I can only imagine how stoked the kids would be to have me as a teacher. Up until about a month ago, it was going to be public school (how it pains me to so disappoint my beloved Boortz), and that was that. I'll skip the long story about how it came to be, but I just put the form in the mail to send him to a half-day kindergarten program at one of the churches nearby. The class size this year is 8, but could potentially max out at 16. My fourth grade teacher, one of my favorites, is the teacher. HOW COOL IS THAT?!

-(Macy is also signed up for M-W-F preschool).

-We have left diapers and Pull-Ups behind. God generally knows how much I can handle and doesn't give me more. He gave me a little challenge there during that process, but I think He eventually said "oh. Oh my. Cease and desist - this lady's coming unhinged." My sanity has returned, at least in that regard.

-You know how sometimes you get something and love it so much you want everyone to have it? I hadn't really splurged in awhile, so I did on this jacket (in slate gray, in case one of the awful color-blocked versions comes up). Is it worth $108? Well, is ANY hoodie worth $108? Am I glad I spent $108 on it? Oh heavens yes.....I used some Christmas money on these crops. If you run and need crops for any season, I highly recommend these. I wore them for my half, and I always make sure that they are available for my week's long run when weather permits....Finally, I had to erode a gift card and my paypal balance for appropriate running gear for the summer and have absolutely no regrets about this top. Love, love, love.

-Speaking of things you think everyone should know about, here are a couple food-related goodies. I make this recipe about weekly. I am in love with it (but you have to accept the vast amounts of heavy cream). I don't change much about the recipe, except that I just bake the chicken prior to making the dish, and I use fresh basil if I happen to have it on hand. Not over-salting or under-salting is also key. And of course, how can Nutella cheesecake be anything but amazing? It was an amazing cheesecake, but I think next time I will try another recipe. The cheesecake part didn't taste a whole lot like Nutella, but the Nutella ganache on top made it all okay.

I've also been in a slump. You have some options to get out of it.
1. Try to write something every day. Even if it is snarky, only funny to you, and makes you look bad.
or what I go with
2. Wait for inspiration to happen, but give time to write it when it does.

In other news, your super fattening chicken recipe can be KETO friendly for me and other paleo dieters by leaving out the pasta. Thanks for adding to me reportoire.

Thanks Emma! I would love to get more into blogging, but I want to make it meaningful. We'll see! Enjoy the recipe - the pasta just gets in the way anyway. ;)
